If we have a cluster with two datacenter, each with three nodes and our data has a RF of three (3) for each DC. To make a full backup can we only take a snapshot from one of the nodes ? With RF of three per DC and three nodes by DC, is it correct the assumption that each node has all the info ?

In theory, yes. But in practice, you need to take a snapshot of all nodes in a cluster to guarantee that you have all the data. There are no shortcuts.
By only taking a backup on one node, you are making a huge assumption that all the replicas are consistent and that the repairs are running successfully regularly. This is not a recommended procedure and the convention is to backup all nodes in the cluster. Cheers!
