There are absolutely no issues with installing Cassandra as a non-root user.
As I wrote in the Installing Cassandra page (CASSANDRA-15466):
The most obvious attribute of the tarball installation is it does not require
root
permissions and can be installed on any Linux distribution.
I've worked with a lot of companies who install Cassandra in this manner. You should be fine. Cheers!
